Can the most recent transactions, contracts, payments, etc. appear on top of the list (in descending order) as a default?

No, But you can click again on each tab and it will take you to the bottom of the list.

Which deposits tab? By the deposits screen you put in what you are searching. So why go to the bottom. There is always the option of Move to Last Record.
