Is there a way to set the default file type for scanning to pdf, to support double sided printing?

We would like to scan double sided documents in a single scan and save them as a single attachment.  What is the best way to do that?

You can always scan to your own scanning software and attach later. Note that PDF attachments cannot be viewed with the attachment report.
